brown bananas?

"if life gives you brown banana's,
make banana cake!"

this recipe is originally from my sister. it's perfect to use up old bananas and works great to feed a large group! and there's nothing better than CREAM CHEESE ICING!


BANANA SHEET CAKE
  • 1/2 cup butter (room temp)
  • 1 1/2 cups sugar
  • 2 eggs
  • 2/3 cup buttermilk
  • 1 tsp soda
  • 1 tsp vanilla
  • 2 cups flour
  • 2 cups mashed bananas (4-6)
  1. mix butter
  2. add sugar and eggs mix well
  3. add buttermilk, soda, vanilla and mashed bananas
  4. mix in flour, just until most, do not over mix or it will become gooey.
  5. bake in a greased jelly roll pan at 350 for around 15-20 minutes or until golden brown edges, top may not become brown. do not over bake.

CREAM CHEESE ICING
  • 1 block cream cheese (room temp)
  • 1/2 cup butter (room temp)
  • 4 cups icing sugar
  • 1 tsp vanilla
  1. mix cream cheese and butter until well whipped.
  2. add icing sugar and then add vanilla
  3. this may yield more icing than desired, if so, just save the remaining in the fridge for up to 1 week.

DANGER!!! I have eaten almost a whole pan of these when Sandra made them once! And now I have the recipe. This could be trouble!
